Eating healthy does not need to be time consuming or expensive. Here are some simple seasonal recipes.
Watermelon salad
Dressing
2 Tbsp. Extra virgin olive oil
3 Tbsp. Lime juice
1/4 tsp. sea salt
Salad
5 cups of cubed watermelon
1/3 cup feta cheese
1 cubed cucumber
1/3 cup torn mint
sea salt to taste
Add cubed watermelon, cucumber and feta cheese to a bowl.
Top with dressing and garnish with torn mint leaves.
Serve.

Heading 1
Romaine lettuce 'tacos'
1 head of Romaine- separate leaves.
3/4 cup lentils
3/4 cup quinoa
2 cups of broth or water
1 tsp. cumin
1 tsp. sea salt or salt substitute
1/2 tsp. cinnamon
1 clove garlic or to taste
1 raw shredded carrot
Cook lentils and quinoa in one pot. Add in cumin, salt, garlic and cinnamon.
Stuff Romaine leaves with cooked mixture and top with shredded carrots.

Quinoa Tabbouleh Salad
1 cup quinoa cooked and cold
1 cup diced and peeled cucumber
1 cup cherry tomatoes, halved
1 cup parsley
1/4 cup of feta cheese or nutritional yeast or vegan substitute
2 Tbsp. black olives chopped
1 Tbsp. chopped mint
1 Tbsp. lemon juice
Kosher salt
Prepare Quinoa and cool.
Then add diced cucumber, tomatoes, parsley, feta and olives.
Toss in Olive oil, lemon juice and salt.
Serve.
